Can you believe the summer is coming to a close! Crazy! My oldest two kids will be heading off to live the college life in just a couple of weeks, leaving MyHandsomeHusband and I with just three children living at home. Again…crazy. 🙂 I’m not entirely sure how we arrived at this stage of life, seriously. I’m extremelyproud of my oldest two and excited and hopeful for the year to come!

I have had many, many requests this summer from my kids, their circle of friends and the cute Young Women I work with in my ward for a post dedicated to “college student” type recipes. Here is a sampleof the actual requests I’ve received…

“Please! Post some super easy college student recipes! We are begging you. Don’t let us starve at college! Also, couldyou please make sure thefabulous recipes you post for uscost hardly any money and only take 5 minutes to make?” (Ha! Easier said than done, right?)

And so, today dear reader, my post is dedicated to four insanely cheap, super quick, tasty recipes that are perfect for college life…for you cute college aged kids and for the Mom’s who are sending you off! Most of these recipes are a twist on common college food (ramen noodles, grilled cheese, etc) with a couple of extra ingredients that make them taste a whole lot better. Now, if you aren’t going to college this fall, please be aware that you can still make these recipes. We actually make the Garlic Butter Grilled Cheese all the time for lunch (or a fast dinner!) as well as a version of the Crispy Black Bean Burritos. “Cheap and Easy” is something almost all of us can appreciate, am I right!

Thai Peanut Ramen Noodles

This is a super easy and fun twist on regular Ramen Noodles! Youonly need the three ingredients pictured above to make it happen. The peanut butter adds a little bit of protein, the sriracha a nice spicy kick. A great way to eat those cheap Ramen Noodles!

THAI PEANUT RAMEN NOODLES
Time: 10 minutes
Yield: 1 serving

1 package Ramen Noodles
1 heaping Tb peanut butter
1/2 tsp srirachachili sauce
peanuts (optional)
green onion (optional)

1. Cook the ramen according to package instructions.
2. Once you have added the seasoning package and stirred it in, pour almost all of the liquid from the noodles.
3. Stir in the peanut butter and sriracha (and the peanuts and chopped green onion, if you have them!)

Crispy Black Bean Burritos

These Crispy Black Bean Burritos have a fabulous texture and are loaded with lightly seasoned black beans. They make a great hearty lunch or dinner!

CRISPY BLACK BEAN BURRITOS
Time: 10 minutes
Yield: 4 burritos

1 (15 ounce) can black beans, drained
2 Tb salsa
1/4 tsp garlic salt
4 tortillas
1 C cheddar cheese, grated
1 Tb butter, or vegetable oil (or cooking spray if you are in a pinch)

1. Mix the drained beans, salsa and garlic salt together in a small bowl.
2. Lay out four tortillas and sprinkle about 1/4 c of cheese on each one. Spoon 1/4 of the bean mixture over the cheese. Roll them into a burritoshape by taking two sides, folding them in and then wrapping tightly from left to right.
3. Heat a skillet up over medium high heat. Add the butter and allow it to heat through. Place the burritos into the pan and allow them to brown on all four sides.
Serve and enjoy!

GARLIC BUTTER GRILLED CHEESE

This is not an ordinary grilled cheese, my friends. With the addition of a little garlic salt and parsley (dried, not fresh) added to the butter the grilled cheese experience is kicked up several notches! Hope you love them. My kids and I sure do.

GARLIC BUTTER GRILLED CHEESE SANDWICH
Time: 10 minutes
Yield: 2 sandwiches

1 Tb butter, softened
1/4 tsp garlic salt
1/8 tsp parsley
4 slices bread (we love 9 grain bread with this recipe)
1 1/2 C cheddar cheese, grated

1. Mix the butter, garlic salt and parsley together in a small dish.
2. Heat a large skillet up over medium high heat. Butter one side of each piece of bread.
3. Lay 2 slices (butter side down) on the hot griddle. Cover each with cheese and place a piece of bread (butter side up) on top. Allow the bottom to get golden brown, then carefully flip it over. When the cheese has melted and both sides of the bread are golden, then it’s done!

Italian Pepperoni and Cheese Quesadillas

Similar to the Garlic Butter Grilled Cheese, these quesadillas have a yummy garlic butter outside, with cheese and pepperoni on the inside. My kids totally love these! Not only are they easy to make but are super budget friendly as well.

ITALIAN PEPPERONI QUESADILLAS
Time: 10 minutes
Yield: 2 quesadillas

1 Tb butter
1/4 tsp garlic salt
1/8 tsp parsley flakes
4 tortillas
1 C cheddar cheese, grated
10-20 pepperoni slices

1. In a small bowl combine the butter, garlic salt and parsley flakes.
2. Spread the butter mixture on one side of 4 tortillas.
3. Heat a skillet up over medium high heat. Lay one tortilla (butter side down) on the skillet. Sprinkle some cheese over the top. Lay the pepperoni over the top of the cheese and sprinkle with additional cheese. Lay another tortilla over the top (butter side up!). When the bottom is golden brown and the cheese has melted, flip the quesadilla over and allow it to become golden brown on the other side.
4. Cut into wedges and serve.
