These Turkish Gozleme are the best savory homemade Turkish flatbreads made from scratch!

They are made with classic spinach and feta filling. Great to serve for lunch or even dinner. They are irresistible and so delicious. So, are you ready to learn how to make spinach feta gozleme? Let’s get started!
What You Need For This Recipe
To make this gozleme flatbread recipe you need only 4 ingredients for the dough and 5 ingredients for the filling. Get the following ingredients on your grocery shopping list:Gozleme dough
- All-purpose flour – for a pliable elastic dough I use all-purpose flour. You can also use wheat flour
- Olive oil – adds flavor to the dough
- Water – to bind the dough
- Salt – to season the dough add salt
Filling
- Baby spinach – fresh spinach
- Eggs – large eggs
- Greek feta cheese – crumble the feta cheese into small chunks
- Garlic – fresh garlic mince
- Black pepper – season to taste

How To Make Gozleme With Spinach And Feta
Make the dough
- You can make this recipe with a stand mixer with a dough hook. Mix for 2½ minutes on medium-high until smooth.
- The dough should be a pliable, smooth ball, not sticky. You can also make the dough by hand.
- Mix as described but knead the dough with your hands for 5 minutes until you have a smooth elastic dough. Cover the dough with a clean towel and let it rest for 20 minutes.
- Sprinkle a cutting board with flour. Cut the dough in half and roll it into a rectangle about 14 inches to 8 inches.
- Clean the spinach and remove the stems. Put the spinach in a bowl and add minced garlic.
- Stir the egg in a small bowl, then add it to the spinach and crunch some pepper. Knead the egg through the spinach so it will reduce in volume.
- Crumble the feta cheese and stir it through the spinach mixture.
Make Gozleme
- Put the spinach feta mixture on half the rectangle dough. Fold the uncovered part of the dough over the filling. Press the edges down to press out any excess air pockets. Seal the edges with water.
- Preheat olive oil in a large skillet over medium-high heat. Slide the gozleme into the skillet.
- Let it cook for about 3-5 minutes until golden and crispy with brown patches. Press the edges using a spatula. Flip the flatbread and cook it for another 3-5 minutes.
- Again, press the gozleme down lightly in the pan until golden crispy. Take it out of the pan and cut it into 6 pieces.
- Serve immediately.

Gozleme Turkish Flatbread Recipe
If you have never heard of Gözleme it is a traditional savory Turkish flatbread pastry dish filled with a variety of fillings. Gozleme dough is usually unleavened.
Made with only 3 ingredients flour, salt, and water. You can also make gözleme dough with yeast but then is it similar to Bazlama. It is also possible to make it with Yufka dough but we are making the unleavened version.
The dough is rolled thin, and filled with a spinach and feta topping. It is sealed and cooked on a hot cast-iron griddle or in a skillet.
Topping Options To Use In Gozleme
You can also make this Gozleme recipe with other toppings like:
- Minced beef
- Lamb stew
- Seafood
- Vegetables like spinach, zucchini, eggplant, leek, peppers, onion, or mushrooms
- Cheese
- Boiled eggs
- Herbs
- Spices
Use Fresh Or Frozen Spinach In Gozleme?
You can use either however when you use frozen spinach thaw it completely and put it in a strainer. Frozen spinach holds a lot of liquid that you do not want in your Gozleme recipe.
So, strain before following the recipe. For the fresh spinach you can either use raw, which I did in this recipe, or wilt it in a cast iron skillet with some oil.
When using fresh spinach remove as many stems as possible. Also, drain if you wilt the spinach in a skillet as it will have a lot of water that you do not want in your flatbread.
How To Store Gozleme
Can you freeze gozleme? Yes, you can freeze gozleme but you have more options to store your Turkish gozleme. In all cases let it cool completely first before storing it:
- Refrigerator – you can store gozleme in the fridge for up to 3 days. Store it in an airtight food container or in a Ziploc bag
- Freezer – want to keep gozleme longer, you can store it in the freezer. Put it into a freezer-friendly food container or a resealable bag. Label it and store it for up to two months
How To Reheat Gozleme
You have several ways to reheat your Turkish gozleme:
- Cast-iron skillet – as you made this dish in a skillet you can also reheat gozleme in a cast-iron skillet. Preheat to medium and put the gozleme in the skillet. Let it warm up gradually so the crust doesn’t burn and the inside gets a chance to heat as well. Warm for 7 to 10 minutes and turn regularly
- Oven – you can also reheat gozleme in the oven. Preheat the oven to 375℉/190℃ and wrap the gozleme in aluminum foil. Reheat the gozleme for 10 to 12 minutes depending on the thickness. Check if it is hot inside else extend with a couple of minutes
- Air Fryer – you can also reheat your Turkish gozleme in an Air Fryer as well. Preheat the Air Fryer to 350℉/175℃ for 3 minutes and put gozleme wrapped in foil inside the Air Fryer for 5 minutes

Gozleme with spinach and feta

A tasty lunch or dinner? Try this gozleme with spinach and feta recipe. This Turkish flatbread is unleavened so done in no time and so tasty!
Ingredients
- 1¼ cups all-purpose flour
- 2½ tablespoon olive oil
- 90 ml water
- ¼ teaspoon salt
- Filling:
- 10 oz baby spinach
- 10 oz Greek feta cheese
- 1 garlic clove, minced
- 1 egg
- ½ teaspoon black pepper
Instructions
- Make the dough:

- Preheat olive oil in a large skillet over medium-high heat. Slide the gozleme into the skillet
- Let it cook for about 3-5 minutes until golden and crispy. Press the edges. Flip the flatbread and cook it for another 3-5 minutes
- Press down lightly until golden crispy. Take it out of the pan and cut it into 6 pieces
- Repeat and make a second gozleme
- Serve immediately
