Hushpuppies are a southern staple anywhere, and especially on the OBX! This Outer Banks inspired hushpuppy recipe will serve as the perfect side to any meal!

Directions:

1 // Whisk eggs, sugar, salt, water, and milk in a large bowl. In a separate bowl, whisk together cornmeal, flour, and baking powder. Combine wet ingredients with dry and stir until batter is thick.

2 // In cast iron skillet or heavy bottomed pot, heat enough oil to come halfway up the sides

3 // Drop 1 tablespoon of batter at a time into the oil, taking care to not crowd the pot/pan. Fry until deep golden on all tides, turning for even cooking; around 5 minutes. Transfer hushpuppies to towelined dish.

She-crab Soup

Directions

1 // Melt butter over medium heat in large stock pot. Cook onion until soft

2 // Add flour

3 // Add seafood stock and reduce to low heat until thickened

4 // Add heavy cream and bring to boil

5 // Reduce heat to low. Add wrocestershire, lemon zest, pepper, cayenne pepper, 1 tsp of salt, and 1/2 of the crab. Let simmer for 5 minutes.

6 // Combine remaining crab meat, salt, and sherry in a small bowl.

7 // Serve soup and top with a scoop of remaining crab mixture

Shrimp Burgers

Shrimp burgers, another classic OBX recipe! Perfect for summer days after being at the beach all day or kicking it at the pool. Shrimp burgers with a side of fries (or for the above mentioned hushpuppies) make a perfect meal!

Directions

1 // Coarsley chop half od the shrimp and add to a medium bowl

2 // Place the remaining shrimp, garlic, and cilantro/parsley in a food processor. Pulse shrimp mixture to create chunky paste. Mix shrimp paste in the bowl with chopped shrimp

3 // Add the salt, paprika, onion powder, Old Bay, cayenne pepper, Panko breadcrumbs, and egg; mix only to combine

4 // Form into 4 patties

5 // Heat a skillet over medium high heat with vegetable oil. Add burgers and cook 3-4 minutes on each side. Serve on roll with lettuce and mayo

Corn Crab Chowder

Corn crab chowder is another OBX staple. The beauty of this fun recipe? If you’re not a huge fan of crab or have an allergy, you can substitute the crab with cooked shrimp or cooked chopped chicken!

Directions

1 // Cook bacon in a Dutch oven over medium heat until crisp. Remove bacon and drain on paper towels, reserving 2 Tbsp. of grease in Dutch oven. Crumble bacon.

2 // Sautée celery, green bell pepper, and diced onion in grease until tender

3 // Whist together broth and flour until smooth and add to celery mixture. Stir in corn and bring to a boil. Reduce heat and simmer, stirring occasionally for 3o minutes. Gently stir in crabmeat, whipping cream, cilantro, salt, and pepper. Serve warm with crumbled bacon

Apple Uglies

If you’ve ever been to the Orange Blossom Bakery in Buxton, you know how treasured (and delicious) Apple Uglies are! While this recipe isn’t the exact replica of the Apple Uglies at Orange Blossom, it’s a pretty close dupe and will satisfy your craving until you can get back to the Outer Banks!

Directions

1 // Whisk the yeast into the warm water

2 // In an electric mixer, mix the sugar and shortening into a cream. Add the egg, vanilla, milk and yeast.

3 // Mix together the flour, salt, and nutmeg into the liquid ingredients. Beat for 8 minutes.

4 // Place dough in a lightly oiled bowl, cover, and let rise

5 // Remove dough from bowl and place on a lightly floured board. Roll into a sheet about 1/2 inch thick

6 // Spread apple filling evenly over the top and sprinkle with cinnamon.

7 // Using a dough scraper, chop the dough into pieces vertically then horizontally.

8 // Using 1/2 cup of chopped dough at a time, mold into oblog, irregular shapes and place 2 inches apart on large paking pan

9 // Cover with another pan, leaving enough room for dough to rise

10 // In a deep skillet, heat vegetable oil to 375º and dip a metal pancake turner into the hot fat

11 // Careffully slide the turner under the risen dough and place uglies into the skillet a few at a time, do not crowd

12 // Cook for about 1.5 minutes until golden brown underneath, turn, and continue to cook for another 1.5 minutes

13 // Using tongs to place cooked uglies on a metal rack to drain

14 // Combine 4 cups of powdered sugar with 6 tablespoons of water to create icing. Drizzle on top of uglies
