When I was in my early 20s, I had the amazing opportunity to live on the lovely island of Barbados for 6 months. In my efforts to get into graduate school in paleoanthropology, I was helping on a research project at the Barbados Primate Research Center and Wildlife Reserve. While every week day was taken up with studying the vervet monkeys that roam this small Caribbean island, every weekend was spent, as you might imagine, at the beach. We had quite a fun gang of researchers and locals and it was a wild and wonderful time.

One of our local friends, Richard, was very adept at scaling coconut trees. And he was not a small guy, either! This was my first introduction to really fresh coconut milk and coconut meat, which came not from the older brown coconuts but from the young green ones. There was this jelly-like flesh inside that was so delicious and could be easily scooped out with your fingers. It was vastly different from anything I’d ever known as “coconut” and it kind of blew my mind.

I’ve always been crazy for coconut, but I think my time in Barbados made me more so. From Pina Coladas to coconut curries to coconut cake, I am quite a coconut fiend.     I just made the coconut creme pie this past weekend for my dad’s birthday. He looooooves coconut and we all are doing some form of Paleo/THM thing. He was shocked at the decadence of it! And since some of us are lactose intolerant I subbed out heavy cream for a can of coconut milk + a little almond milk to make the correct amount. Soooooo wonderful!! Thank you!

    The first time I had real coconut blew my mind too. I didn’t think I would like it since I wasn’t a fan of the sweetened coconut that was all I thought there was, but I loved it. I go for real or unsweetened only now and love it so much! Especially toasted
